Categories can be used to group similar assignments together. Each category has an associated weight that is used to calculate the final grade. For example, you might create a quiz category that contains 10 quizzes which are worth 25% of the final grade.
The Release Date is the date after which students will be able to see the assignment on their grade report. Both the release date for the category and for the specific assignment must be met before the student will be able to see the assignment or their grade.
Note: Every assignment has a number of points associated with it. This is used for two things. First, when entering grades for assignments, scores entered are divided by the assignment's points to get the percentage grade. Second, if the category does not have Weight all assignments equally turned "on", then the number of points for each assignment is used as a weighting when calculating the category average.
